The third of four seasonal Amari we’re releasing throughout the next year, Winter Amaro is our take on a classic fernet style bitter liqueur. The first step in making this spirit is a vapor extraction of a variety of botanicals in the gin basket. After it’s distilled, we macerate flavor into the high proof spirit with a one and a half day soak. It’s finally proofed down with an aloe vera, peppermint, and speedwell tincture. Winter Amaro leads with a sweet, herbal nose followed by a spiced peppermint, slightly salty taste. It’s mildly bitter with a long, red hot cinnamon lingering finish. We recommend sipping on this spirt neat, or using it as a fernet substitute in a classic Toronto or Hanky Panky.
