Whiskey Batch 1 is made using a grain bill consisting of 100% two-row pale malted barley from Valley Malt in Hadley, MA and fermented using a Tennessee-style yeast strain for a full, well-rounded flavor profile. Our whiskey is twice-distilled, with only the most flavorful cuts making it into a 15-gallon charred Maine oak barrel made by Portland Barrel Company. Maine oak, which has a tighter grain than other American oaks grown in warmer climates, increases the sweet, caramel notes that barrel-aging brings.
Tasting notes for this spirit are a malty, fruity nose of banana and apricot; a body of rich, spiced fruit with caramel and coffee undertones; and an oak finish.
