Gin

An approachable, easy drinking American style gin. Crafted in handmade copper pot stills in Everett, Massachusetts, our signature Gin is made with organic ingredients to create a bright and floral spirit with distinct, pleasant notes of lavender and eucalyptus.

This is a very special spirit to us. It was the first we released back in 2015 and we haven’t changed the recipe since.

Botanicals Juniper, Coriander, Lavender, Eucalyptus, and Lemongrass.

Where to find it Purchase bottles through our online shop or look for it at one of the many liquor stores we partner with throughout Massachusetts. Orders placed through our online shop can be picked up anytime within regular business hours. Unfortunately we’re unable to ship spirits at this time.

Why the Northern Shrike?

Like the flavor profile of our signature Gin, the Northern Shrike is light and agile, and makes well-defined maneuvers as it flies. Another fun fact: Northern Shrikes eat bugs and small animals but they do not have claws or teeth. To kill their prey, they drop them on sharp objects such as thorns and fence posts. A badass bird for a badass gin.

London Dry Gin

Our take on a classic using the highest quality ingredients. Crafted in copper pot stills in Massachusetts, our London Dry Gin is a tribute to the signature style of gin that we all know and love. Why the European Starling?

Both the renowned spirit and the bird made its way to America through innovation and demand. About 100 starlings were first introduced by Shakespeare enthusiasts in 1890 in Central Park, New York. They are now one of the most abundant birds in North America with a population of around 200 million. London Dry Gin was created in England in the early 17th. century. This distinct style consists of a neutral grain spirit distilled with juniper and other botanicals to give it flavor. It was a massive hit in England, and eventually made its way to America in the late 1890s where it has grown in popularity ever since.

Old Tom Gin

A barrel aged gin that pays tribute to our forebears. Our Old Tom Gin is crafted in copper pot stills in Everett, Massachusetts before resting in whiskey barrels and slightly sweetened. An aroma of pine and oak leads to soft notes of citrus and vanilla, with a long spicy finish.

History of Old Tom Gin Old Tom Gin plays a significant role in the history of gin. It emerged in 18th. century England during the Gin Craze, when spirits were harsh and alcohol consumption was heavy. To increase profit margins, distillers would cut gin with turpentine and sulphuric acid, creating spirits that were barely drinkable and sometimes even deadly. To make this gin taste better, the English started sweetening it with liquorice or sugar, making it a sweeter, less botanical version of what was being consumed at the time. This new spirit became known as Old Tom Gin.

So what’s in a name? There are many tales, but the name “Old Tom” allegedly comes from a picture of a black cat named “Tom” that hung outside of a bar in London. If you saw a bar with an old tom cat in the window, you could drop a coin into a lot underneath the cat’s paw and get a shot of gin in return. Old Tom dominated the gin scene for decades, but as distillation techniques improved, there became less of a need for sweetening agents, and folks became more interested in drier styles of gin (i.e. London Dry).  Old Tom recently made its comeback and we’re excited to share our version with you.

Why the Winter Wren?

As legend has it, this tiny bird once challenged the powerful eagle to a race. The wren was so small he was able to sneak on the eagle’s neck once the race began. The wren jumped off the eagle’s neck right before the finish line, flying past him to win the race. The king of all birds was declared! Barrel aged spirits are the kings of all spirits, which is why the Winter Wren was chosen to represent Old Tom Gin.

Summer Gin

New England summer, captured in a bottle. Crafted in handmade copper pot stills in Everett, Massachusetts, Summer Gin is a blend of wild Maine blueberries, fragrant botanicals, and juniper. The result is an earthy, soothing gin, best enjoyed on a relaxing summer day.

Summer Gin was inspired by the wild juniper and blueberries that line the coast of Acadia National Park in Maine. Co-Founders Jackson and Zack are from Mount Dessert Island, and this spirit captures the essence of summers they enjoyed growing up on the island.

How it’s made
Summer Gin is first crafted using a blend of Juniper, orris root, coriander, lemongrass, lavender, and eucalyptus. Sound familiar? These are most of the same botanicals found in our flagship Gin. The difference is that we dial back the amount of lavender and eucalyptus used, and creating a less floral result. We also add orris root to help bring out the blueberry notes. We then soak wild Maine blueberries into the gin for 10 days, remove the blueberries and proof the spirit. Voila, Summer Gin is here!

Support Local
The wild Maine blueberries used to make Summer Gin are sourced from Blue Sky Produce, who pick their blueberries from 8 different small growers around Maine. As Blue Sky quotes, “supporting small growers enables them to stay in business and to continue being good stewards of their land.”

Why is there sediment in my bottle?
We do not chill-filter any of our spirits. This means they have the full flavor and mouthfeel of their class. As a result, Summer Gin will occasionally exude a cloudy or hazy appearance, or sediment may be visible. Have no fear, this is completely natural.

Where to find it
Purchase bottles through our online shop or look for it at one of the many liquor stores we partner with throughout Massachusetts. Orders placed through our online shop can be picked up anytime within regular business hours. Unfortunately we’re unable to ship spirits at this time.

This is a seasonal spirit which means it’s typically only available during the summer.

Summer Reserve

When life gives you lemons, you make lemonade. When life gives you gin-soaked blueberries… you make Summer Reserve!

Summer Reserve is a barrel-rested premium herbal spirit made from gin-infused wild Maine blueberries and local honey. After we finish making our blueberry-infused Summer Gin, we’re left with several hundred pounds of gin-soaked blueberries that were strained out of the gin. Since we don’t like to waste, we decided to make a liqueur out of these blueberries.

To make Summer Reserve, we press blueberries like grapes and let the resulting liqueur mellow in barrels for months. It’s then proofed down and lightly sweetened with locally sourced honey from Merrimack Valley Apiaries. The result is a complex spirit leading with notes of bittersweet blueberries, spiced oak, honey, and savory herbs.

Summer Reserve makes a great summer sipper, or you can easily mix it up with soda water and a lemon for a flavorful refresher at home. Scroll down for some cocktail recipes.
